三份御膳底檔再現(xiàn)乾隆下?lián)P州的飲食

【摘要】:正近來,隨著紀(jì)錄片《舌尖上的中國(guó)》的熱播,社會(huì)上掀起了中華民族飲食文化研究的熱潮。片中,千百年來?yè)P(yáng)州人對(duì)飲食的精致追求成為驚鴻一瞥。中國(guó)四大菜系中,淮揚(yáng)菜自古以來就以其風(fēng)格雅麗、南北咸宜的特點(diǎn)占據(jù)著極高的地位,而揚(yáng)州能夠成為淮揚(yáng)菜的發(fā)源地之一,與揚(yáng)州在明清時(shí)期的商業(yè)繁榮以及康熙、乾隆皇帝數(shù)次南巡駐蹕揚(yáng)州,有著密不可分的聯(lián)系!肚鍖m揚(yáng)州御檔》收錄的乾隆下江南至揚(yáng)州期間的三件飲食檔案,分別出自乾隆第四、五、六次
[Abstract]:Recently, with the popularity of documentary "China on the tongue", there has been a fever in the study of Chinese food culture. In the film, Yangzhou people for thousands of years to the exquisite pursuit of food has become a glimpse. Among the four major Chinese cuisines, Huaiyang cuisine has occupied a very high position since ancient times because of its elegant style and the characteristics of the north and south. Yangzhou was able to become one of the birthplaces of Huaiyang cuisine, and the commercial prosperity of Yangzhou during the Ming and Qing dynasties and Kangxi. Emperor Qianlong was in residence in Yangzhou several times in the south, which was closely related. The three food files collected by Emperor Qianlong from the south of the Yangtze River to Yangzhou are from the fourth, fifth, and sixth times of Qianlong, respectively.
