【摘要】:本研究的目的是采用噴霧干燥技術實現(xiàn)酪蛋白巨肽(CMP)的工業(yè)化生產。借助響應面分析法對CMP噴霧干燥工藝進行優(yōu)化,研究了進風溫度、風機頻率、進料速度對CMP出粉量的影響,,并對CMP的感官指標進行評定。結果表明,制備CMP的最佳噴霧干燥條件為:進風溫度161℃,風機頻率50 Hz,進料速度401 m L/h;此條件下,CMP出粉量達13.6 g/200 m L,感官指標評價良好。
[Abstract]:The purpose of this study was to realize the industrial production of casein giant peptide ( CMP ) by spray drying technology . The influence of inlet temperature , fan frequency and feed rate on CMP powder content was studied by means of response surface analysis .
