人參鹿胎抗疲勞葡萄酒制備工藝及功能毒理學(xué)評(píng)價(jià)
[Abstract]:The purpose of this paper is to develop a kind of health food which can protect physical fatigue, and study the health care wine made from ginseng, deer fetus, rose and yellow essence, and white sugar as auxiliary material. The extraction process was investigated and the best preparation method was obtained by synthetically evaluating the content of total saponins and the sensory evaluation of the wine by using percolation method heat reflux method and cold soaking method to prepare Panax ginseng deer fetal anti-fatigue wine with the content of total saponins as well as the sensory evaluation of the wine. The orthogonal experiment was designed with the mass ratio of material to liquid, extraction time and times of extraction as the factors. According to the above indexes, the optimum technological conditions were as follows: using cold leaching method. The optimum condition of orthogonal experiment was that the mass ratio of material to liquid was 1: 10, and the cold soaking was 1 day each time. Cold dip twice. The effects of centrifugal speed and time on the precipitation of the sample were investigated. The optimum centrifugation conditions were determined as 4000 r/min and 6 min.. A certain amount of white sugar or honey was added to several samples. According to the sensory evaluation, the most suitable addition of white sugar was 3 g / 100 mL. The quality standard of the product was studied. The precision of the determination of total saponins in ginseng deer fetal antifatigue wine by ultraviolet spectrophotometry was investigated. The repeatability and the recovery rate were determined. The method was proved to be stable and feasible. The functional evaluation of ginseng deer fetal antifatigue wine showed that the serum urea nitrogen content in each dose group was lower than that in the control group, and the difference between the high dose group and the blank group was statistically significant, which could improve the liver glycogen reserve ability of mice. Increase the swimming time of mice, the difference between the high dose group and the blank group was statistically significant; The area under the curve after swimming had no statistical significance compared with the control group, but it had a downward trend. It can be seen that ginseng deer fetal antifatigue wine has the effect of relieving physical fatigue. The toxicological evaluation of ginseng deer fetal antifatigue wine showed that MTD was higher than 21 g/kg BW, in acute toxicity test, but the results of micronucleus test, Ames test and sperm malformation test were all negative. No adverse effects were found in each index of the 30-day feeding trial. It can be seen that ginseng deer fetal anti-fatigue wine is safe and reliable.
