【摘要】:在食品安全關注白熱化的今天,在我國"菜籃子"中占據(jù)越來越多份額的傳統(tǒng)豆制食品的安全性也得到的人們的關注。民以食為天,消費習慣與消費水平都在不斷提升的大眾消費者從關心菜品的口味漸漸向菜品對身體健康的影響轉(zhuǎn)變,傳統(tǒng)豆制品就是人們關心的一道家常食品。發(fā)展傳統(tǒng)豆制品加工業(yè)具有一定的經(jīng)濟價值與文化價值,大部分扎根在城市邊緣或農(nóng)村的傳統(tǒng)豆制品企業(yè),在為人們提供美味食物的時候,也同時帶動了當?shù)亟?jīng)濟與文化的發(fā)展。目前我國傳統(tǒng)豆制品生產(chǎn)量迅速增長,產(chǎn)品種類日益增多,消費市場有很大潛力。城市傳統(tǒng)豆制品加工業(yè)市場日趨規(guī)范,產(chǎn)品質(zhì)量穩(wěn)步提升,但是部分城市及城鄉(xiāng)結(jié)合地區(qū)、農(nóng)村地區(qū)的市場監(jiān)管任務十分艱巨。傳統(tǒng)豆制品加工業(yè)規(guī);俣忍嵘,自動化步伐也不斷加快,傳統(tǒng)豆制品品牌意識有所加強,地方政府已有意識地開展小型豆制品作坊的規(guī)范和引導工作。同時,傳統(tǒng)豆制品的工藝技術和設備機械化水平不斷提高,但是相比國際先進水平仍有很大差距。近年來,在政府的支持下,行業(yè)管理工作取得一定成效,全國及地方豆制品行業(yè)協(xié)會的作用開始顯現(xiàn),但是作用效力有限?v觀我國的傳統(tǒng)豆制品加工業(yè),可說是成績與問題同在,機遇和挑戰(zhàn)并存。南京市作為江蘇省省會城市,其傳統(tǒng)豆制品企業(yè)數(shù)量較多,人們對傳統(tǒng)豆制品的口味與質(zhì)量也更為關注。伴隨著這個城市的發(fā)展,南京市傳統(tǒng)豆制品加工業(yè)目前呈現(xiàn)出欣欣向榮的態(tài)勢,源源不斷地為南京市以及其他市區(qū)的人們提供日常豆制品,在滿足南京人民飲食需求的同時,呈現(xiàn)出如傳統(tǒng)豆制品加工企業(yè)數(shù)量逐步減少,豆制品質(zhì)量大幅提高;傳統(tǒng)豆制品品種多樣化、品牌化逐漸增強;傳統(tǒng)豆制品加工業(yè)市場潛力大;政府扶持與監(jiān)管雙管齊下的狀態(tài)。與此同時,南京市傳統(tǒng)豆制品加工業(yè)也存在著許多歷史遺留問題和現(xiàn)代發(fā)展帶來的新問題。問題主要包括小作坊生產(chǎn)仍有較多數(shù)量;加工工藝不規(guī)范,科技含量低;加工設備簡單,生產(chǎn)方式落后;產(chǎn)品包裝落后,不適應現(xiàn)代物流要求;名牌意識薄弱;政策扶持力度小,資金投入少等。針對南京市傳統(tǒng)豆制品加工業(yè)出現(xiàn)的問題,要加大宣傳力度,提高發(fā)展傳統(tǒng)豆制品加工業(yè)重要性的認識。要嚴格遵守行業(yè)標準,加大監(jiān)管力度。要研發(fā)先進加工工藝和設備,培養(yǎng)高新技術人才。同時,完善包裝和冷鏈物流運輸。適應時代發(fā)展,創(chuàng)名牌,走品牌戰(zhàn)略。政府加大政策扶持力度,主要從稅收、資金、品牌扶持三個方面入手。最后,重視豆制品行業(yè)協(xié)會的作用,要完善豆制品行業(yè)協(xié)會建設。
[Abstract]:In today's food safety concerns, the safety of traditional bean food, which accounts for more and more of the "vegetable basket" in China, has also attracted people's attention. People take food as the day, consumption habits and consumption level are constantly improving, the popular consumers gradually change from caring about the taste of dishes to the influence of food on health. Traditional bean products is a family food that people care about. The development of traditional soybean processing industry has a certain economic and cultural value, most of the traditional soybean products enterprises rooted on the edge of the city or in rural areas, while providing people with delicious food, It also promotes the development of local economy and culture. At present, the production of traditional soybean products in China is increasing rapidly, the kinds of products are increasing day by day, and the consumer market has great potential. The market of traditional soybean products processing industry is becoming more and more standardized, and the quality of products is improving steadily. However, in some cities and the combination of urban and rural areas, the task of market supervision in rural areas is very arduous. The speed of traditional soybean processing industry has been improved, the pace of automation has been quickened, the brand awareness of traditional soybean products has been strengthened, and local governments have consciously carried out the standardization and guidance work of small soybean products workshops. At the same time, the mechanization level of traditional soybean products technology and equipment has been improved, but compared with the international advanced level, there is still a big gap. In recent years, with the support of the government, the industry management has made some achievements, the national and local soybean industry associations have begun to show the role, but the effect is limited. Throughout China's traditional soybean processing industry, it can be said that achievements and problems exist, opportunities and challenges coexist. Nanjing, as the capital city of Jiangsu Province, has more traditional soybean products enterprises and people pay more attention to the taste and quality of traditional bean products. With the development of this city, Nanjing's traditional bean products processing industry is now showing a thriving trend, providing daily soybean products to people in Nanjing and other urban areas constantly, while meeting the dietary needs of the people in Nanjing. For example, the number of traditional soybean products processing enterprises gradually decreased, the quality of soybean products was greatly improved, the variety of traditional soybean products was diversified, the brand gradually strengthened, the market potential of traditional soybean products processing industry was great. The state of both government support and regulation. At the same time, there are many problems left over from history and new problems brought by modern development in Nanjing traditional soybean processing industry. The main problems include the small workshop production still has a large number; the processing technology is not standardized, the science and technology content is low; the processing equipment is simple, the production mode is backward; the product packaging is backward, does not adapt to the modern logistics request; the famous brand consciousness is weak; The policy support dynamics is small, the fund investment is small and so on. In view of the problems of traditional soybean processing industry in Nanjing, it is necessary to strengthen propaganda and raise the awareness of the importance of developing traditional soybean products processing industry. We should strictly abide by industry standards and step up supervision. We should develop advanced processing technology and equipment and train high-tech talents. At the same time, improve packaging and cold-chain logistics transport. Adapt to the development of the times, create brand name, brand strategy. Government increase policy support, mainly from tax, capital, brand support three aspects. Finally, attach importance to the role of soybean industry associations, to improve the construction of soybean industry associations.
